Fireman's Paella

Ingredients:

- tsps olive oil
4 links sweet sausage
8 to 12 shrimp, peeled and deveined
l lb, chicken pieces
8 to 12 clams
4 cups diced onions
1/2 - lb scallops
1 clove garlic, chopped
one green and one red pepper, diced
1 bay leaf
saffron to taste (or Sazon Goya)
1/2 teaspoon thyme
dried red pepper
1 cup uncooked rice
1 can diced tomatoes, undrained
salt and pepper
1/2 cup water
heat oil in dutch oven, prick sausage and cook
5 minutes, turning often.
add chicken, skin side down, cook until chicken and sausages are done...15 to 20 minutes
add peppers, onions, garlic, saffron, dried red pepper thyme and bayleaf.
add tomatoes, rice, water, salt and pepper.
cover tightly and cook 15 minutes.
add fish and cook 8 more minutes.
i don't use the fish or the salt...and i cook it about 1/2 hour to make sure the rice is done.
turn it over occasionally to make sure all the rice gets into the fluid.
i like to cook it in the morning for dinner....
